Professional Cookery Intermediate (Level 2)

Hospitality & Catering is based at The Manor House Restaurant, next to our Corby Campus. The restaurant is open to the public and provides a first-class facility to develop your skills and gain valuable hands-on experience in a supervised setting.

Our experienced tutors will provide you with all the key skills and training that you need, working in fully equipped professional kitchens including a specialist patisserie kitchen.

During the study programme you will have the opportunity to participate in regional and national competitions and gain work experience at prestigious outdoor events such as concerts and sporting events.

To begin this study programme you will need…
3 GCSEs grades 9-3 including English & maths OR
• Hospitality & Catering at Level 1.

What qualifications will I gain?

  • Professional Cookery Level 2 Diploma
  • Food Safety and Health & Safety Level 2 Certificates
  • English & Maths qualifications if required

Course content

What will I study?

  • You will develop your skills in the commercial kitchens at the Manor House Restaurant, which involves fast paced activities in a pressurised environment.
  • You will develop your understanding and ability within hospitality, taking the lead in hosting and managing the restaurant.
  • You will study food preparation and cooking including: fruit and vegetables; soups; sauces; meat; offal; poultry and fish; and hot and cold desserts.
  • You will also study employment skills, food safety, health and safety, menus and cost management.

Next steps

This study programme will prepare you for progression on to employment, an apprenticeship or higher level study.

Full uniform for kitchen and front of house will cost ÂŁ195.
