Entry requirements
Essential: This qualification is aimed at candidates who have progressed from level 2, or require further training, so it is important that they gain their experience in a professional kitchen. They should use appropriate equipment in terms of the size and scale, which must be of industrial quality. When being assessed, candidates will need to have sufficient space to work efficiently, hygienically and in a safe manner

Course content
You will study:
- Health and safety in catering and hospitality
- Developing skills for employment in the catering and hospitality industry
- Catering operations, costs and menu planning
Skills gained
This course allow learners to learn, develop and practise the skills required for employment and/or career progression in the catering and hospitality sector.
- Use of knives and other equipment.
- Designing of recipes and food presentation and design.
- A knowledge and understanding of how to work in a hygienic manner.
Next steps
Learners can progress into employment or to the following City & Guilds qualifications:
- Level 2 Diploma in Advanced Professional Cookery (7100) (Kitchen and Larder)
- Level 3 Diploma in Hospitality Supervision and Leadership (7250)
Additional information
Students will be required to wear chief white. Protective shoes and hair net as well as using other PPE.
