Advanced Diploma in Professional Patisserie and Confectionery (Level 3)Hospitality & Catering is based at The Manor House Restaurant next to our Corby Campus. The restaurant is open to the public and provides a first-class facility to develop your skills and gain valuable hands-on experience in a supervised setting.
Our experienced tutors will provide you with all the key skills and training that you need, working in fully equipped professional kitchens including a specialist patisserie kitchen.

To begin this study programme you will need…
- 4 GCSEs grades 9-4 ideally including English and
maths
AND
- Professional Cookery at Level 2.
What qualifications will I gain?
- Professional Patisserie Level 3 Diploma
- Food Safety and Health & Safety Level 2 Certificates if required
- English & maths qualifications if required
Course content
This diploma is designed to help you progress into senior roles within the pastry and baking industry. It will build on your existing skills while providing you with essential leadership and management training, preparing you to take on greater responsibilities in a professional kitchen. You’ll gain valuable hands-on experience working in the fast-paced, high-pressure commercial kitchens of the Manor House Restaurant.
The course covers advanced techniques in baking, cooking, and patisserie, including expertly crafted cakes, various breads and enriched dough items, hot and cold desserts, iced creations, paste-based products, sugar craft, and petit fours.
Additionally, you will develop crucial skills in employment practices, food safety, health and safety standards, menu planning, and cost management to ensure you are fully prepared for the demands of the industry.
Next steps
This study programme will prepare you for progression on to employment, an apprenticeship or higher level study.
