Advanced Diploma in Professional Cookery (Level 3)Hospitality & Catering is based at The Manor House Restaurant next to our Corby Campus. The restaurant is open to the public and provides a first-class facility to develop your skills and gain valuable hands-on experience in a supervised setting.
Our experienced tutors will provide you with all the key skills and training that you need, working in fully equipped professional kitchens including a specialist patisserie kitchen.

4 GCSEs grades 9-4 ideally including English and maths AND - Professional Cookery at Level 2.
What qualifications will I gain?
- Professional Cookery Level 3 Diploma
- Food Safety and Health & Safety Level 2 Certificates if required
- English & Maths qualifications if required
Course content
What will I study?
The Diploma in Professional Cookery is designed to help you advance into higher-level kitchen roles. It will expand your current knowledge while equipping you with essential leadership and management skills, preparing you to take on greater responsibilities. You’ll enhance your abilities by working in the busy commercial kitchens at the Manor House Restaurant, where fast-paced, high-pressure environments are the norm.
The course covers advanced techniques in food preparation and cooking, including intricate dishes featuring vegetables, meat, offal, poultry, fish, and shellfish, as well as soups, sauces, and both hot and cold desserts.
In addition, you’ll study important areas such as employment skills, food safety, health and safety regulations, menu planning, and cost control.
Next steps
This study programme will prepare you for progression on to employment, an apprenticeship or higher level study.

Full uniform for kitchen and front of house will cost ÂŁ195, updates available for progressing students.
